Have you been rooting through old recipes looking for a new and exciting dish? Or perhaps you haven't set down your roots in the kitchen yet. Chefs and foodies of all experience levels are invited to attend this fun and informative cooking workshop presented by the Miami Beach Botanical Garden and Chef Catherine Daum Lucas.

Chef Catherine attended the Culinary Institute of America, and studied with chefs in France and Central Italy. She is a member of Women Chefs and Restauranteurs, the International Association of Culinary Professionals, Les Dames d'Escoffier International, and The American Association of Personal and Private Chefs. She currently teaches Adult Education at West Boca High School Culinary Academy and Boca Raton High School. As a personal chef in South Florida, she cooks healthy dinners for busy clients and will teach you the tips and tricks for creating the perfect dish every time that family and dinner guests will love.

Chef Catherine's class includes a healthy blend of root vegetables, nutritious grains, fresh herbs and other readily-available Florida bounty. The three recipes explore the diversity you can achieve with similar ingredients, from roots tossed in a citrus and quinoa salad, to roasted with sherry or mashed with rosemary and thyme straight from the Miami Beach Botanical Garden's edible garden.

This class covers proper knife skills, which are essential to avoiding injury, and also for creating even textures with each ingredient, and helping you prepare food more efficiently. Learn about the rich culinary history of root crops through food lore, and of course, come hungry to taste all of the dishes prepared in class.
