Community Kitchen Workshop

Event Details:

Who should attend this workshop? Kitchen owners and managers, and the regulatory inspectors who license and inspect these facilities. Every licensed kitchen is encouraged to send representation to attend this important networking & educational event.

What will this event cover? The one-day workshop will include topics such as:

  • Regulatory oversight from various agencies & programs at the local and state level - which program licenses what? where is there crossover? what forms are needed? what regulations are being enforced? are there training requirements?
  • Variances - who needs them, why, and how to apply.
  • Active Managerial Control - how can you ensure AMC for an entire facility? Hear from FDA on preventive approaches to controlling risk factors and preventing foodborne illness. 
  • Better Process Authorities - UGA will explain what a better process authority can offer your operators, from labeling to cleaning specifications and product classification. 
  • When good things go bad - NC Dept. of Ag will tell you about what happened in one of their kitchens with a tempeh product, and how you can learn from this recall event.
  • Food product scenarios - what products or scenarios do you have questions about? From making ice-cream to selling food from a mobile truck, low-acid canned foods to juice (and everything in between), you can learn more about specific product types & licensing requirements.
