featuring

Mahonia Gardens and Splitting Aces Livestock

The Meet Your Farmer Dinner Series is a wonderful way to really meet your local farmers!

Meet Your Farmer dinners consist of a locally sourced, gourmet meal hosted by and prepared by rotating local restaurants. During dinner you will be treated to a presentation by the evening's featured farmer.

About 10 Below at The Oxford: Offering an eclectic array of locally sourced cuisine, 10 Below showcases a variety of urban-organic dishes designed by our Executive Chef, Darrell Henrichs.

About the Chef: Executive Chef Darrell Henrichs’ precision and flair is reflected in every one of 10 Below Restaurant’s offerings. His worldly approach, drawing upon flavors and ingredients from aroundthe globe, provides diners with a unique food experience. Chef Henrichs’ career began nearly three decades ago. After attending the New England Culinary Institute in Vermont, Chef Henrichs worked at an array of restaurants and resorts, including the following four-star establishments: Flagstaff House in Boulder, CO; Hotel Jeromein Aspen, CO; and Fess Parker’s Resort in Santa Barbara, Calif. In addition to these roles, he also owned and managed the Blue Sage Bakery in Steamboat Springs, CO, where he created delightful breads, pastries, cakes and specialty desserts. Since relocating to Bend in 2003, Chef Henrichs was the Executive Chef at Bend Golf and Country Club, as well as the Executive Chef at Touchmark.

About Mahonia: Our mission is simple: starting from the ground and rising up: we want to grow the best produce we can and share it with our community. We operate using beyond-organic practices. We choose not to certify as organic because we are small enough to know all of our customers first-hand and can communicate with them. We welcome our community and customers to the farm- visit your food, observe our practices, witness the growth!

About Splitting Aces Livestock: Our passion is to grow healthy livestock that comes from Central Oregon. We have deep respect for the livestock that provides food for ourselves and for others, as well as other products that we use on a daily basis. We provide our livestock with the best care possible. This includes nutritious feed, medicine to prevent diseases and a pasture to roam with their herd. Our cattle have been fed a 100% grass diet from full pasture access, no grain, or supplements are fed to finish, no hormones or implants are used. 100% natural raised grass fed beef gives more of the natural taste of the meat produced from the animal.
