Field to Vase Dinner  |  Boulder

 

A flower-filled Rocky Mountain dining experience awaits you at The Fresh Herb Co., in Longmont, just a few miles from Boulder. On Saturday, July 18, 2015, the table will be set for the Field to Vase Dinner here where local, Colorado blooms share the table with a seasonal menu served family style.

Share a convivial meal with new and old friends at a thriving Certified American Grown flower farm where the fields are filled with annuals, perennials and herbs that flourish under the endless blue Colorado skies.

Here's an excerpt about The Fresh Herb Co., excerpted from The 50 Mile Bouquet:

Hugging the curve of the bucolic, tree-lined Left-hand Creek, six of the farm’s 10 acres are planted with cut flower crops. The property contains highly desirable loamy soil – “You can grow just about anything in this dirt,” Chet maintains. The seeds of annual larkspur, bachelor’s buttons, bells of Ireland and corn cockle are direct-sown in fields irrigated by pond water that’s pumped through a series of natural sand filters and overhead irrigation lines.

Perennials, including monk’s hood, Jerusalem sage, phlox, Veronica and peonies, reliably produce blooms year after year. Even during Colorado’s hot summers, the climate here is moderated by cool air that settles by the creek every evening. Pests and diseases are nearly non-existent, thanks to proper selection of disease-resistant varieties and sustainable cultural practices that encourage the beneficial insects that feed on pests. Inside the greenhouse, rows of luscious lilies grow near tables of herb seedlings.

Chet and Kristy also lease an 18-acre parcel down the road, where they grow numerous varieties of sunflowers, zinnias and ornamental grasses to sell for cut bunches and bouquets. It’s their own little slice of Provence in Colorado!

Our Floral Designer, Lisa Weddel of L. Weddel Design. Acclaimed Denver area floral and event designer, Lisa brings her love of locally grown flowers and her distinct floral style to the table at The Fresh Herb Co. She will design with beautiful, just-picked blooms -- straight from the fields where we'll be dining. Let's call that hyper-local floral design!

Our Chef, Lyle Davis of Catering by Plenty. A flower and vegetable farmer himself, Lyle is famous throughout the Boulder region for his inspired field-to-table menus that incorporate fresh, seasonal and delicious fare. Lyle is the co-owner of Pastures of Plenty Farm, a neighboring farm to The Fresh Herb Co. 

Our Dessert Artisan, Miche Bacher of Niche Confections. Based in Boulder, Miche is the author of the acclaimed book, Cooking with Flowers: Sweet and Savory Recipes with Rose Petals, Lilacs, Lavender, and Other Edible Flowers. She will conjure a mouthwatering - and beautiful - dessert featuring edible flowers and herbs from our host farm.
