About Chef Billy Gilbo
Born into the biz, Chef Billy Gilbo's father owned and operated a seafood restaurant throughout his childhood years. "There is nothing else I've ever wanted to do," says Gilbo. At the age of 14 he started his career in Long Beach Island, NJ. He was never classically trained, but came up learning under many talented chefs in Philadelphia and New Jersey. Most recently he was part of the opening culinary staff at the lavish Union Trust, Chef de Cuisine at Monsu and Head Chef at the long time New Jersey favorite Charley's Other Brother.
Last fall, Gilbo came to the Hattery Stove & Still, revamped the menu (while keeping the favorites) and is letting us taste some of what he has learned in his 20 plus year career.

Just a year ago, the Hattery Stove & Still opened in the beautifully renovated Doylestown Inn on West State Street. My favorite spot at the Hattery is the cozy, really cool lower level (think 'speakeasy'). For this Bucks County Dinner Club event, we'll have the whole space to ourselves.
Chef Billy Gilbo will guide us through a four-course meal with wines specially chosen by Sommelier Rob Reese from the Hattery's extensive wine list.
