What does a great Butcher need? Sharp knives, impeccable knife skills, top grade meats, and in the case of Angelo Pirri, generations of knowledge passed down from his grandfather who emigrated from Sicily, and his father who ran the family butcher shop on Atwells Avenue in Providence. We’ll start this class at Angelo’s Aquidneck Meat Market where he’ll give us a tour of his shop and go over the various and different cuts of meats & sausages. From there we’ll go to the Newport Cooks! kitchen where Angelo will teach us how to properly trim down larger pieces of meat into fillets and specialty cuts with little to no wastage. He’ll also demonstrate cutting a leg of lamb, a bone-in ham and a brisket. Everyone will take home a chicken and boneless pork filets they cut in class.
