SEMAP's 2013 Twilight Grower Education Series continues with a session on preserving the harvest: Tomato Canning with Chef Rosa Galeno of Rosa's Food Shoppe in Easton!

Event Details:

Artisanal Food Educator/Chef Rosa Galeno grew up in the Italian countryside where canning is a way of life.  Rich with tradition and innate know-how, Rosa will show us how easy it is for busy families to prepare and process fresh locally grown tomatoes and enjoy them year round.  Imagine the fresh taste of heirloom tomatoes in the darkest winter evening, filling your kitchen with the fragrance of fields bursting with juicy tomato goodness. It CAN be done!

 Participants will learn:

 When to use tomatoes to use and how to properly wash/cut for different canning purposes.

How to preserve fresh herbs including basil, for year round use.

Proper canning technique for tomatoes including sauces vs whole and chunk.

Simple, quick recipes to use with you canned tomatoes

How to properly process (seal) tomatoes at home (detail instructions included)

A life long skill that the whole family can participate in!

Students will visually see the method of cooking jars properly and how to time properly.  

Rosa will also answer our questions about what to fill our pantries with and how to preserve things we use every day like herbs, oils and vinegars.
