Nutrition in the Management of Health & Disease

Program Description
This program covers various health conditions such as cardiovascular disease, weight issues (obesity and eating disorders), as well as guidelines for diabetic management.  There will also be a section dedicated to specialized diets focused on allergies, sensitivities, and intolerances.  A review of special points to be aware of while taking history, doing the assessment, and labs will be covered.  Treatment protocols and guidelines for each condition will be reviewed and discussed; these include dietary interventions, supplements, common pharmaceuticals as well as any other appropriate protocols.

Course Objectives
Upon successful completion of this program, the student will be able to:

  • Understand the components of taking a history to include both dietary and nutritional aspects and perform a physical exam that includes both relevant to the internal disorders covered
  • Understand and use assessment tools such as anthropometric measures, the diet diary, labs (includes specialized labs that include food allergy, salivary testing, hair analysis, stool samples, and urinary analysis), and other assessment tools in order to assess and manage a patient.  An overview of proper and ethical billing, coding and compensation for these tests will also be reviewed
  • Utilize counseling skills in order to better educate a patient and increase compliance
  • Create prescription/ treatment plan for a patient

Format
The program content will be presented in lecture format.

Outline
Hours 1-2:           Evaluation Methods and Technique. Discussion on the use of assessment tools, including: anthropometric measures, diet diary, labs (including food allergy, salivary testing, hair analysis and digestive stool analysis) including appropriate billing and coding for assessments. Detailed description of how to create, monitor and manage a treatment plan throughout a course of treatment. Clinical application of diets as well as understanding foods to eat or avoid

 Hours 3-4:           Weight Issues. Detailed description of eating disorders, body dysmorphic disorder and obesity. Discussion on the impact of how each condition is perceived, evaluated and treated. Body composition testing with clinical application and interpretation

Hours 5-6:           Cardiovascular Disease – focus on hypertension and high cholesterol. Detailed literature review. Clinical pearls and testing. History for cardiovascular disease – what to look for in history and examination. Dietary intervention and alternative treatments to common conditions. Management of cardiovascular disease – the dietary program, cholesterol and heart disease, with understanding fats, carbohydrates, and protein needs

Hours 7-8:           Diabetes. Discussion on the impact of nutrition for diabetic patients. Detailed description of dietary management and the effects of different foods on diabetes. Clinical application of dietary interventions, supplements, and other protocols

Hours 9-10:         Specialized Diets – Allergies, Sensitivities and intolerances. Detailed review of literature. IgG, IgE, IgA reactions and how they are related to foods. Differences between allergies, intolerances, and sensitivities. Gluten and dairy allergies. How to evaluate and based off of testing the intervention, treatment and dietary modifications best suitable for the patient

Hours 11-12:      Review of treatment plans and protocols. Detailed review of case studies. Discussion on treating co-morbidities
