French Provençal Wine Dinner

In the brilliant sunlight and Mediterranean climate, the cuisine of Provençe resembles more closely Italian cuisine than the bistro-fare of Paris. Provençe includes both the Rhône and Durance Valleys, and in addition to wine, the highly fertile agricultural culture produces a wide variety of sun-ripened vegetables, seafood, herbs & beans. You'll find our menu to be regionally inspired with old-world style and flavor.

After creating the menu comes an immense (but fun!) challenge: finding the right wine to pair perfectly with the food! We are still in the process of selecting the perfect Kermit Lynch wine, and will soon update this menu with our final pairings. 

PROVENÇAL MENU

Amuse-Bouche
Tartare de Thon à la Niçoise
Fresh ahi tuna lightly tossed in citrus aioli and fresh herbs
over lemon-caper remoulade served in a charred petite red potato
Gougères
Light pastries made with Gruyère cheese and truffle butter
filled with duck liver pâté and chèvre mousse

Bouillabaisse
Light tomato and herb broth with mussels, shrimp, seasonal white fish,
fennel and Pernod over toasted baguette with rouille (saffron aioli)

Cassoulet
Slow-simmered stew of beans, fresh herbs,
house made pork-mushroom sausage, pancetta, and duck confit

Pot-au-Feu à la Provençal
Beef short ribs braised with pearl onions, turnips, carrots, castelvetrano olives, tomatoes, and capers served over potatoes au gratin

Socca Avec la Salade des Betteraves
Garbanzo bean flour crêpes filled with Roquefort cheese,
served with a beet & watercress salad

Tian de Lait
Provençal warm rum-custard topped with red wine-poached pears
and oreillettes (carnival fritters)
