CARNITAS TACOS WITH PICKLED ONIONS AND SALSA VERDE with queso fresco

 Traditional tacos are made with a slow roasted pork shoulder, topped with easy to make pickled red onions with a tangy crunch and the bright-tasting salsa verde which helps cut through the richness of the pork. It is than topped with queso fresco that adds a velvety, salty punch and some chopped cilantro.

 A tamale is a traditional Mesoamerican dish made of masa (a corn-based dough), filled with meat, cheese, vegetables, or pretty much anything you want (most commonly spiced pork or beef), and then steamed or boiled in a corn husk or banana leaf.
