Supper Club special wine dinner at Journeyman 

The Culinary Guild of New England and Les Dames d’Escoffier of Boston invite you to join them for a joint event on June 15th: a very special wine dinner at Journeyman! Be among the first to see Journeyman’s recent renovations that added new wood burning grills, an extended kitchen counter in the dining room, and a wonderful new menu.  

Journeyman’s cuisine is a modern slant on traditional foods from French, Italian, American and Asian cultures; guests are  encouraged to step outside their comfort zones and leave their gastronomic fate in the hands of Chef Tru Lang and the kitchen team.  Journeyman serves carefully curated menus that follow local, seasonal availability of produce, dairy, and meats.  

Tse Wei Lim and Diana Kudajarova opened Journeyman in 2010. Their professional backgrounds run the gamut from academia to technology to theater, but they have always found food an excellent field in which to exercise their creativity as well as their obsessive-compulsive tendencies.

For this event, Chef Tru Lang will prepare a 7 course tasting menu paired with 5 wines.  In addition to his immense talent, Tru has a long, colorful history in the culinary world which began with cooking with Susan Regis at Pava while finishing his studies in political science at UMass Amherst. A year later he moved to Cambridge to learn French Cuisine Nouvelle with Tim Wiechmann at TW Food. Under him, Tru honed classic European techniques with a lighter touch.

After two years at TW Food, Tru moved to California to work at Manresa, where cooking became ingredient focused.  After Manresa came a year and a half at Quince in San Francisco with Chef Mike Tusk., then a few months at Benu (Corey Lee’s now 3 Michelin Starred restaurant in San Francisco). Finally, Tru returned to the Boston area and TW Food---this time as Chef de Cuisine. He took a short hiatus from fine dining to wear several hats for the Bon Me food truck, and in 2014 joined Journeyman as pastry chef and now Chef de Cuisine. 

We at the Culinary Guild and Les Dames are excited to see and taste what Chef Tru will be preparing for us.This event is open to 20 Culinary Guild and Les Dames members and guests.  The cost for this event is $150 for members and $170 for guests.
