Stage NYC: Line Cook Training Program

Preparing New Yorkers for rewarding careers in the New York City restaurant industry

About Stage NYC

Stage NYC is a new, no-cost culinary training program designed to meet the growing demand for qualified kitchen employees in New York City's restaurants while simultaneously increasing access for young adults looking to start their careers in the culinary arts.  Participants will gain the technical skills, industry exposure and on-the-job training experience necessary to launch and grow rewarding careers as line cooks in the hospitality industry.

Program Requirements

Stage NYC is a training program targeting young adults, between the ages of 18 and 24, who are not currently employed or enrolled in school.  All qualified applicants are encouraged to apply and will be considered.  All applicants must:

  • Be at least 18 years of age
  • Be a New York City resident
  • Be authorized to work in the United States
  • Demonstrate the ability to lift 40 pounds as required in many kitchens
  • Demonstrate the command of math and English language skills required by the industry 
  • Be able and willing to work flexible hours, including evenings, weekends and holidays
  • Possess a strong interest in and enthusiasm for working in the culinary industry
  • Meet all federal selective service requirements (see www.sss.gov)
  • Meet other federal qualifications, as required

Training Details

Stage NYC is a 12-week training program that includes:

  • One week of full-time classroom-based training in food preparation and safety on site at a centrally located kitchen 
  • 11 weeks of full-time, paid on-the-job training with various restaurant employers with an additional five days of integrated classroom-based training throughout 

During the on-the-job training portion of StageNYC participants will be paid $12 an hour by their host restaurant.  While not guaranteed, this position does have the possibility to turn into full-time work after the training.

The next cohort of participants will start training on Monday, June 26th.

100% attendance and 100% punctuality is required.

Key Skills

After completing training with Stage NYC, participants will be able to:

  • understand a kitchen workflow and organizational chart
  • recognize the different areas of culinary production
  • identify and properly operate kitchen equipment
  • utilize tools commonly used in food handling, preparation and cooking
  • deploy appropriate cooking techniques and practice safe work and food handling habits
  • prepare recipes using measuring tools and unit conversion methods
  • identify commonly used food ingredients and categories (meats, fish, dairy, spices, etc.)
  • understand food cost control and
  • earn their New York City Food Handler Certificate
