 A 7-course celebration of spring with creative foraged food from ocean, beach + forest.

Halibut poke, maple, chili, cress

Spring vegetables, pine, maple, anise hyssop, sorrel foam

Chicken liver parfait, maple wine jelly, chicken mousse, skin crisps, celery

Maple beer, garlic, and aged Dutchmans gouda soup, cheese crisp, carmelized apples

Pork loin, smoked pig skin and pea risotto, pea tendrils, pickled onions, maple mustard sauce

Rhubarb sorbet, salty maple toasted oats

Mountain ash and maple panna cotta
