Blackened Salmon Tacos
Citrus Salsa
Instructions
First, make the salsa: in a serving bowl, put your orange segments, onion, jalapeno and cilantro. Toss with the lime juice, olive oil, vinegar, salt and pepper. Sprinkle in a little chili powder or paprika if you want, and taste to adjust the seasoning.
In a shallow bowl, mix together cumin, smoked paprika, cayenne, garlic powder, salt and pepper. Pat seasoning mixture onto both sides of each piece of salmon. In a large skillet, heat about 1 tablespoon of olive oil over medium heat. Place salmon in the hot oil. Cook for 2-3 minutes, then flip salmon with a spatula. Cook for about 5-6 more minutes, or until fish flakes easily with a fork.
