What is "Raclette"?
Raclette is a semi-hard cheese that is usually fashioned into a wheel of about 6 kg (13 lb). Raclette is a Savoyard (French) as well as Swiss dish based on heating the cheese and scraping off (from French: racler) the melted part. The melted cheese is served over boiled new potatoes, and sliced cold meats, cornichon pickles, and pickled onions are served on the side. This is a very delicious, yet simple meal, and very filling. It is great for social gatherings.
What to drink with Raclette: A light-bodied dry white wine or fruity light red wine. Try a white Swiss wine, Sauvignon Blanc, Pinot Noir or Rosé.
