Join us for a very special evening with Spanish Import Director Nicole Andrus!

 



We're very excited to announce our next Pop Up Dinner at our UTC location, Apollonia Bistro with Chef Erin Sealy! This month we'll be featuring a 4-course tapas inspired dinner with slightly less wine, food, time commitment and cost, than our usual 5-6 course dinners. The reduction is the only change, you'll still have the same great pairing experience and wine conversation as with all of our events. For our next wine dinner, we'll be featuring four fantastic Spanish wines, perfect the holidays and your Thanksgiving table! We've got a great line up planned featuring a great cross-section of Spanish regions. To make this event even more exciting, we have a very special guest joining us to present the wines! Spanish Import Director, Nicole Andrus is in town from Barcelona for the week and we've managed to grab an evening with her, during her stay! Chef Erin Sealy will be preparing a 4-course Tapas themed menu, which will highlight the uniqueness of each wine and follow the Spanish theme for the night. Expect a great evening of paired courses, and fantastic wines!

Each selection will be paired with its own wine inspired dinner course, prepared by Chef Erin Sealy. Chef Erin specializes in pairing food with wine, with a slightly different approach than most. Prior to creating a menu, each wine is tasted and reviewed and then she creates a food pairing, highlighting the nuances of each wine. This concept creates a dinner and pairing experience with layers of complexity and unique creations which exemplify the enjoyment of each wine. With a passion for food and wine, Chef Erin delights attendees with a detailed account of the pairing concept and cooking techniques that create each course. Expect a fabulous evening of wine, food & educational insights! Caldereta de Cordero Spanish Style Lamb Stew with White Beans, Carrots, Red Wine and Paprika. Served on Crusty Bread with Creme Fraiche and Pickled Red Onion
