Please join us for Florida ICES Mini Classes in West Palm Beach. We have a wide range of instructors and classes from 2 & 3 hour class to a 2 day mini boot camp. Norman Davis-Mirrow Glazing Cakes, Dripped Cakes & Crackled Techniques DEMO 9:00am 2 hr Fri. Jan. 12th

This type of finish looks so hard but once you learn the techniques you will be saying what the heck! I find that the glazing, dripped, & crackled cakes are great for a man's cake. I hate to do cakes for men becuase i want to put flowers on them but the techniques in this DEMO you will see demostrated mirror glazing a cake the recipe for the glaze learn when the glaze is ready to use, color pour &marble. Drip cake recipe learn when the chocolate is ready to be used & how to pour. Crackled techniques 2 ways learn to crackle with rice paper & how to use a torch to crackle on fondant.

Norman Davis-Flexique Stain Glass Painting 12:00pm 2 hr Fri. Jan. 12th

Learn to pipe with Flexique (individually soldered pieces) and then paint with bright Fexique colors. This technique is a show stopper with the bold soldered look and the bright colors of the glass look Flexique. Students will be working on a plaque learning how to mix, store, pipe, mixing colors and painting with Felexique.

Learn how to cut and prepare a real cake for this quick purse. Learn simple cuts/carving, how to emboss and cover the cake, and then accents to finish this simple fun cake. Learn the newest trend of Flexique! This is a money maker.  Learn to cover a cake with no cracking (by using the right fondant), proper way to use a texture rolling pin, without the seams, paintng and swiiping color off the cake to give a suede old worn look, the poper way to fill a mold, piping to accent on the cake, painting gold or silver and not lose the shine or take off color and learn about a custom design roling pin (how does this help you out)?

 Kathy Scott Sweet Sugar Sculpture 8:30am 3 hr Fri. Jan. 12th

You will make a sugar sculpture using cast isomalt. The sculpture pictured has flowers, but you will be able to decide on your own theme such as floral, seashore, under the sea or any combination. These new forms being presented have been sized to fit the cake decorator and can be used as toppers or table decorations. I am exicted to see what you can design. While we will be using isomalt, the systems also work great for chocolate.

Baby Crib in Chocolate 1:00pm 3 hr Fri. Jan. 12th

In this class you will be making a crib topper with Chocolate.  We will also make the little animals and quilt. You will also receive a pattern to make a crib using a quarter sheet cake using the same techniques learned in class. Mediums used will be chocolate, fondant and buttercream.

Nicholas Lodge Exotic & Tropical Gumpaste Orchids all day 9:00am with lunch break Fri. Jan. 12th

Orchids, spically in the Florida area, are some of the most popular and requested wedding cake flowers. In this class you will learn how to make these stunning exotic & tropical orchids. Students will create the vanda orchid, dendrobium orchid, oncidium orchid and epidendrum orchid.

 Colette Peters Easy Moasics 1:00pm 3 hr Fri. Jan. 12th

Class will be making Mosaic Plaques in fondant using cutters and other cutting tools without cutting out hundreds of separate pieces. You will also be painting the mosaics to give a beautiful sparkle.

Trapunto Designs 5:00pm 3 hr Fri. Jan. 12th

Trapunto is a quilting technique that is also called "stuffed technique". Puffy pieces of fondant will be applied to a surface in a lovely design. You will be able to use Colette's trapunto molds and flowers molds. These can then be painted, antiqued, or left alone.

 Kathleen Lange Lange/Lambeth Method 2 Day Boot Camp Crash Course 9am with lunch break Sat. & Sun. Jan. 13th & 14th

Students attending Lambeth 101 & 201 will be learning the folling: How to start the correct foundation for Lambeth, master the perfect zigzag shell, scroll, swag and puff & elongated puff borders, 3 dimensional over-piping techniques, bead/pearl borders, embelishing techniques, stringwork, how to pipe and apply stringwork, advance stringwork, lace heart pieces and how to apply to your cakes. Students will need to bring 10" cake dummy, placed on 14" Beveled Cone rolled fondant, turntable, apron, wet cloth, basic decorating equipment 2# pwd sugar.

Nicholas Lodge Gumpaste Bridal Flowers A/B/C all day 9:00am with lunch break Sat. Jan. 13th

You will learn how to make these popuar and beautiful bridal flowers. Students will create the anemone, bouvardia and cala lily, including the appropriate buds and leaves.

Norman Davis-Sweet Shapes TM Fondant Sheets (2 tier cake with flowers) 8:00am 3 hr Sat. Jan. 13th

Learn covering a cake without alligator skin. You think onlays are hard to do well not anymore by using Lucks New Sweet Shapes tm Fondant Sheets. You will cover a cake with fondant, accent with flowers, piping, twiddleing, cutting out flower petals, placing the twiddleing wire to flower petal, veining, volor/shaping, tape flower petals together & shape flowers.

Zane Beg-3D Dragon 11:30am 3 hr Sat. Jan.13th

3D dragon is a show stopper. You will learn carving/shaping using rice treats & how to use/make the support system which is the most important part of a cake decorators life. You will also learn rice treat recipe, covering cake with fondant, fondant layering, use texture rolling pin, make eyes, hair, lips etc.

The Victorian doll cake is so great for any girls party. You will have fun with choices of color & molds to bring her to life, covering cake with fondant, simple piping, use of rolling pin, cutting out flower petals, use of mold veining, ball tool & color by painting.

Sideney Galpern Champagne Cake 8:00am 7 hr with lunch break. Sat. Jan. 13th

Create this fabulous mini version of Sidney's gravity defying, elegant puring champagne cake. Marbled fondant affect 1 tiered cake, painted gold accents, build the sturcture for flowing isomalt "champagne", pulled isomalt drips, create mini champagne split & blow bubbles to top it off. Students will learn how to do a landscape. Explore the all natural color line of TruColor while learning tips & techniques that will aid you in becoming an amazing airbrush artist. Supplies provided by instrcture & student will KEEP AIRBRUSH provided in class.

If you have ever made a fondant shoe only to have it break in half after dried or to afraid to tackle one. This class is for you. Time is money in the cake business.  Learn how to make a basic shoe ready to use in about 30 minutes using isomalt. The sweet thing about this system is you never have to touch hot isomalt & have very little drying time. Will also so the platform heel.

Techniques include: flooding with royal icing, creating rolled bondant veneers, proper use of stencils, molds, piping, brush embroidery & lace work.

Create an elegant mini Royal Carriage in isomalt in the New Royal Carriage Sculpture Mat you get to take home $40 value. Create a cobblestone base & willl paint them to bring them to life. Perfect for a 6" cake topper.

We love fondant, most clients prefer buttercream. The reason why most decorators want to work with fondant is they havn't mastered the base coat of a buttercream cake.You will learn how to apply & smooth your buttercream to ALMOST look like fondant. This is not rolled buttercream but applied with a spatula & smoothed with no water. Also learn rosettes, ruffles & other side designs, a special technique for striping your bag, plus 3 color piping.
