Bacteriophage and Bacterial Genomics for Discovery of Alternative Antimicrobials

Microbial food safety is a continuum of production from the farm, to the processor and finally the consumer. Genomic approaches can potentially provide on-farm strategies to reduce bacterial pathogen levels during food- animal production and used to develop alternatives to the commonly used antibiotic growth promoters to prevent transmission of antibiotic resistance through the food chain. Consequently, bacteriophage and bacterial genomics can provide alternatives to commonly used antibiotics.

Approaches include nucleic acid sequencing of bacteriophage genomes to identify potential bacterial species-specific lytic proteins to control bacterial pathogens. Furthermore, utilizing genomics techniques lysins have been synthesized with multiple lytic activities and increased thermal resistance.Bacterial genomics can also be used to identify autolysins for specific bacterial pathogens and for identification of potentially new probiotic bacteria that could also be utilized during food-animal production.

About Dr. Bruce S. Seal
Dr. Bruce S. Seal completed his undergraduate and graduateeducation at the University of Nevada-Reno followed by post-doctoralstudies at the UC San Diego School of Medicine and the ZoologicalSociety of San Diego. The bulk of Dr. Seal’s research was in the animalhealth programs of the Agricultural Research Service of USDA at theNational Animal Disease Center in Ames IA and the high containmentfacility for avian viral diseases in Athens GA. During 2004 Dr. Seal took the position of ResearchLeader for the Poultry Microbiological Safety Research Unit joining the food safety researchprograms for ARS, USDA. Dr. Seal retired from the ARS-USDA during 2014 and now is an Instructorand Adjunct in the Biology Program at Oregon State University Cascades campus in Bend, OR USA.

Dr. Seal has been an active molecular biologist for over thirty years and has greater than 100 peerreviewedpublications, numerous published proceedings as well as invited book chapters whiledirecting the research of graduate students, post-doctoral associates and international visitingscientists. Dr. Seal has made scientific presentations at more than 100 internationally recognizedconferences and has presented over 80 national or internationally invited seminars at scientificinstitutions, as well as to commodity associates. Dr. Seal was also an adjunct graduate facultymember in the Department of Infectious Diseases, College of Veterinary Medicine at the Universityof Georgia and has served on grant proposal review panels for the USDA, the NSF and the NIHalong with providing reviews on an annual basis for other granting agencies internationally.
